Artist Tattfoo Tan, inspired by his colorful food, began photographing and cataloging the fruits and veggies he would buy from the farmers market each week.  Using Photoshop he extracted 88 natural colors and created his Nature Matching System. 

“It is not so much technical as it is conceptual.  It’s more about the idea that color plays such an important role in nutrition.”

He installed these color blocks as a giant mural under the Manhattan Bridge and is now working on creating a similar mural at a Brooklyn school playground. 
I think this is brilliant because it is about life and color, and you can experience that without knowing anything about the project.  Only when you look closer do you discover the nutritional undertones.
